In 1961, a team of baking scientists in Chorleywood, Hertfordshire, worked out how to turn flour into a finished loaf in a few hours. Their method replaced long fermentation with high-speed mixing, extra yeast and a handful of additives, and it still makes about 80% of the bread sold in Britain today. For thousands of years before that, every loaf needed flour, water, salt and many hours of slow fermentation. The factory method removed the hours.

During a long fermentation, wild yeasts and [lactic acid bacteria](https://richhealthmagazine.com/article/one-spoonful-a-day-easy-fermented-food-swaps-that-actually-help-your-gut) feed on the dough. They break down part of the starch, some of the gluten and the fructans that upset sensitive stomachs, and they release acids that slow the speed at which your body turns the finished bread into sugar. They also dismantle much of the phytic acid in the grain, a compound that otherwise locks up iron, zinc and magnesium so you cannot absorb them. The grain matters as much as the method. If you live in the UK, the odds are high that you eat too little fibre: 96% of adults fall short of the recommended 30g a day. Cereal foods supply more of the fibre in British diets than any other food group, so the loaf you buy each week is one of the simplest changes you can make.
