Inflammation is the body's first line of defence, the response it mounts against anything harmful, whether a pathogen, a damaged cell or an irritant. In its acute form it is essential, the very process that lets us heal and recover. The trouble begins when inflammation does not switch off. Chronic inflammation that lingers in the background is linked to a wide range of diseases, among them cancer, cardiovascular disorders and autoimmune conditions, and it is quietly implicated in much of what goes wrong with men's health as the years add up.

Men, on the whole, are worse than women at attending to this until something forces the issue. We tend to wait for the chest pain, the diagnosis, the wake-up call, rather than making the small daily choices that prevent it. Yet the evidence is now overwhelming that the everyday plate is one of the most powerful tools we have, and that the food which calms inflammation is also, conveniently, some of the most satisfying there is. This is not rabbit food and it is not a diet. It is a way of eating built for the long game, and summer is the easiest season in which to start.

The conditions that take men early, heart disease above all, are driven in large part by chronic inflammation. The same low-grade inflammation is tied to type 2 diabetes, to several cancers, to the stiffening of joints that ends the football and the running, and increasingly to the decline of the brain in later life. None of this is inevitable. The way we eat across the decades tilts the odds, and the man who eats well in his forties and fifties is buying himself years of moving freely, thinking clearly and staying in the game. The plate is not a small thing. It is one of the few levers genuinely in your hands.
